I owned 3 of James Morton's 4 books before this one came out (only missing his book on home brewing as I have no time to pick up a new hobby) so I pre-ordered this book the day it was announced. Once again he has not disappointing. As well as containing a wide range of well written recipes, this book contains chapters of information designed to give the reader an understanding of what their dough is doing at every stage and why it is important. The book also does a great job at making itself useful to non professional bakers, with multiple example schedules and explanations of technical jargon to help make sourdough a hobby rather than a job. This has become my new favorite James Morton book and my new favorite sourdough book, I would heartily recommend this to anyone interested in bread making.

I have many bread books and really don't need anymore. But James' book Brilliant Bread was the first one I bought and everything I have made from it always turns out really well. So I couldn't resist buying this new sourdough book and I have not been disappointed. So much useful information and he has such a great way of explaining things. The book is beautifully presented and there are many recipes that I can't wait to try.

As well as being a gorgeous looking book, with high quality stock pages and brilliant photography; this is exactly the guide to sourdough I was looking for.

As always, Morton’s self-deprecating, conversational style of writing makes this as much a work of non-fiction prose as it is a cook-book. You can delve as shallowly or deeply into the bread basket of sourdough as you wish; Morton starts with the basic all you need to know before delving into the minutiae (and microbiology) in detail: which you want to use, as he states, is up to you.

Ending with delicious recipes and an troubleshooting guide, this really seems to be The only sourdough book you’ll ever need (has there ever been a more hipster statement? No. None more hipster.)

Now, time to stir my starter. ‘Jimmy Apples’ is beginning to look hungry...

This is an interesting and super informative book. It starts from the basics to finally milling your own grain. It also goes in length about troubleshooting. I recently bought another book of James Morton and as a beginner making a basic white bread I found the results amazing. He has the knowledge to guide you to making the best bread you will ever taste. This book has lots of sour dough starter recipes . It has picture guides to help with techniques and it goes through step by step of timings. I having started a sour dough starter 2 weeks ago i cant wait to try out his variety of recipes from breads to pannatone. Hopefully my starter will live up to his recipes. If not i will definately try his method of making a starter. After trying recipes from his other book i have every confidence i can make great sour dough breads

This is another cracking book by James Morton. Complex and seemingly contradictory concepts are presented in a layered manner (first as a quick "how" and then a detailed "why"), to aid understanding. The first 100 odd pages, nearly half of the book, is given over to techniques and troubleshooting for just one recipe (Pain au Levain) The second half of the book has many interesting, thought provoking, and useful recipes.

A great book for both beginners, who need a quick recipe to follow and more experienced bakers who need a “workshop manual” for all that could go wrong. If you have baked sourdough a lot, you’ll recognise much of the “gotchas” listed, such as; the activity and acidity of the starter, the proving time and temperature, the wetness of the dough and strength and type of flour. It is unlikely however, unless you are a very experienced baker, that you’ll not find the detailed recipe and the troubleshooting guide useful.

If you enjoyed “Brilliant Bread” this is every bit as good and a great companion to that book. If you are new to sourdough this is a great place to start and if you, like me, have been making sourdough for years, you’ll find much that is useful here.

Absolutely hands down the most comprehensive, yet readable, sourdough cookbook ever! I have James Morton's original bread cookbook and really like the way he writes, it's like having a chat with a friend- any technical terms are explained clearly and where I had previously been unable to start a starter, I managed first time and made absolutely delicious sourdough on my first attempt!! I often sit down and read a bit more of this book, have even brought it in the car to read when waiting, I can't say that for any other cookbook I've ever owned!

I had never thought of trying out sourdough before i saw this book and I have had so much fun with it over the last couple of months. I bought the kindle version first - which was great to read up on the whole thing but once i started baking i realised i needed a paper version which is now full of page markers as i often have 2 or 3 recipes on the go at the same time. The pictures are so much better in colour and the book really is beautiful and very practical. I have learnt such a lot from it and have not bought any bread or cake since i started baking from it. The bread freezes really well too so i have kept up with demand and been so impressed with the results so far! I think anyone who enjoys eating good bread should read this. Best book i have read in a long time!

This book is absolutely amazing. It comes with a whole section of useful information and guidance on how to make sourdough bread and sourdough starter. Initially I struggled to follow the instructions but the more I got into it ( I also looked at youtube videos, I'm useless at retaining information without visual guides) the better I became at baking ( the book had a lot of photos to help you). Once you learn how to make a basic sourdough bread then you move onto the fancier recipes and it has been such a joy. Honestly once you make the neapolitan pizza and the focaccia you will probably never buy them again. Please do give it a little time if you are new to baking. The book is especially good if you are just starting out but it has great recipes for more experienced bakers. Even if you over proof the bread ( like the one in the photos) or under proof it I find it's still comes out delicious. Enjoy!!!

This is an outstandingly good sourdough book. The author is a doctor (GP) and writes in a very clear way with no fluff. He debunks a lot pf sourdough folklore and I guarantee that if you follow his recipe and method you will get excellent sourdough and other bread derivatives.

I have other bread books and have struggled for years with sourdough. This is my best book buy in ages (and I buy a lot of cook books). Very highly recommended.

This is the fourth book for amateur breadmakers that I have bought since I got interested in sourdough nearly two years ago, and it is the best so far. The basics are described simply and in a style that is very encouraging. There are no failures, only opportunities to learn something. The emphasis is on principles, guidelines and troubleshooting, with few absolute directives. Although there are recipes enough, the charm of the book is the enthusiasm and practical advice of the author, who is so obviously keen to ignite his passion for baking in his readers.
