...Ottolenghi non delude mai. Le ricette sono ben spiegate, stuzzicanti e appetitose.
Avrei dato 5 stelle ma vengono proposte varie ricette verdure in puré ed io non ne sono molto attratta.

I do own two other Ottolenghi cookbooks and bought this one on a whim after hearing rave reviews from a friend. I will keep my review simple and to the point (unlike the cookbook!): It Is Not Simple.

The irony is that in the introduction, Ottolenghi writes at length about wanting to keep the recipes simple, including limiting himself to 10 ingredients but not including staples like oil or water or salt or pepper, which is fair enough, but 10 ingredients plus staples is a long list in my book. Especially when the list often includes things like preserved lemons, sumac, date syrup, nigella seeds, which aren't quite pantry staples for most people.

While there are simpler recipes in the book, on the whole most recipes are very Ottolenghi, an intriguing, even bizarre, fusion of spices and herbs and ingredients. While I have cooked and enjoyed Ottolenghi recipes, I have learned from experience not to be taken in when he proclaims it's so easy or wonderful. Many of the flavor combinations are going to be highly subjective. And, like most Ottolenghi recipes, a hit or miss and also highly dependent on that one or two rare ingredient you need to track down or pay a small fortune for, like preserved lemons.

Ottolenghi deserves his place in the annals of culinary history, but the same reasons making him famous are also the same reasons why his recipes are rarely going to be everyday cooking for most people. I won't tell anyone not to get the cookbook, but I will finish the review with the caveat to be aware that despite the title it is still very Ottolenghi, with all the bells and whistles.

I love cookbooks. And sometimes you read one and want to make every recipe. With this I just really struggle. That said, it provides some interesting twists on vegetable side dishes. Additionally, I was surprised, given most of the recipes are vegetarian, at the limited diversity of core vegetables in it. It’s a beautiful book but of limited use

Thought this was going to be a keystone cookbook for me, based on reviews and because I like all of the ingredients these recipes use and already cook very similar dishes that I love as Ottolenghi tends to use. First recipe I tried took 1 hour and 10 minutes to cook (I'm pretty experienced so I don't go slow) and ended up not tasting good, nothing desirable or would want to make again or even get seconds for. It was big disappointment because all of the ingredients individually usually go well together in simple pasta dishes like this, but the sequence in which they were added and cooked made the dish come out soggy and flavors melded into one instead of being prominent in dish (ex. I've never zested a lemon and added lemon juice to pasta juice and not have the dish taste anything like lemon - literally could not taste it and it's because it was added at the wrong time. I should have went with gut and not done it the way the recipe said). It seems this author does churn out cookbooks and my initial impression is that these are not recipes that have been tested and approved by a range of people. My sense is that author has outsourced coming up with recipes to others, and some things just aren't tested and refined. I tend to like viewing recipes online for this reason (since you can see others reviews and critiques), and this has sort of reinforced my belief that many times you are not getting the best tested recipes from a cookbook.

I pre-ordered this book, because Yotam Ottolenghi's recipes are almost always huge successes for me. I like his sense of flavor and some of the surprising combinations he comes up with. I thought this book would be perfect for weeknight cooking. Unfortunately, I find the recipes aren't so much "simple" as "less complicated, sometimes, but also frequently less flavorful".

First, the good. I do like that he lays out his criteria and has a SIMPLE acronym to advise which recipes meet which criteria. Unfortunately, it seems to be inconsistently applied throughout the book, but it's at least a start. He covers the basic pantry ingredients you'll need; I'm not sure I agree with all of them - for example, rose harissa is very difficult to find and quite expensive, at least in the US, and regular harissa works too - but it's nice to have that all covered in detail. And some of the recipes are very, very good, in typical Ottolenghi style. The rose harissa chickpeas with flaked cod are truly easy to make and extremely delicious. The lamb meatballs with feta are great for a weeknight, though you can bake them all the way through rather than fry+bake to make it even faster. There's a baked mint rice with an olive-pomegranate salsa - that salsa is 100% fantastic and I would eat it on anything. Very easy to throw together, too.

The bad: A lot of the dishes just seem not quite complete. The slow-cooked chicken with crisp corn crust has turned out poorly for many people in a couple of cookbook clubs in which I participate. The crust seems to just kind of sink into a soggy mess. And the chicken itself is... I can see where he's going, but there are about fifteen other chili recipes I'd rather eat. The chicken marbella turns out with quite soggy skin, which could be remedied if he instructed air drying. Perhaps it's my American tastes but I don't prefer soggy poultry skin. The sauce itself was good but not amazing. The overall feel of the book just hasn't been inspiring to me the way Ottolenghi's other books are.

In summary, the problem is perhaps that my expectations were too high; however, if you haven't cooked with Ottolenghi before, I would recommend a different book first, like Jerusalem or Plenty.

I purchased this cookbook because we have Ottolenghi’s earlier cookbooks and have enjoyed them a great deal. I was very interested in the thought of incorporating many of Ottolenghi’s signature flavors with less time and labor than is usually required. The good news about this book is that the dishes that I’ve made all taste great, have that signature Ottolenghi flavor and are fun to learn.

They are in no way, however, “simple” in the preparation.

In that regard, this book is a MASSIVE disappointment. SIMPLE, in Ottolenghi language is actually an acronym that stands for “Short on time”, “10 Ingredients or less”, “Make ahead”, “Pantry”, “Lazy” and “Easier than you think”.

The dishes that are “Short on Time” typically take at least an hour or more. The “Make Ahead” dishes sometimes can only be made a couple hours ahead (not say, on a weekend before the week begins). The “Easier than you think” dishes are not easier or harder than anything else (including things in his other cookbooks). This just isn’t a very practical cookbook for the busy family and as such, feels like false marketing.

If you want an Ottolenghi starter cookbook, go with one of the first two (Ottolenghi or Plenty). If you have either or both of those, consider SIMPLE only if you have to have more Ottolenghi in your life. Do not buy this cookbook if you are looking for easy, quick recipes to cook for your family. If you are an Ottolenghi completist, consider it.

Love the book it’s great! No issues with it at all but wherever Amazon are storing them is covering them in black marks and the edges were all bashed. For a xmas gift this wasn’t suitable so I had to get a replacement one!

I have other Ottolenghi cookbooks and find that these recipes are not any simpler than the other cookbooks, and also not as good. I tried the stewed chicken with the crispy corn crust. Time consuming. The stewed chicken was delicious, but the corn crust was not worth the trouble and wasn’t crispy. I recommend other cook books by this esteemed chef, but not this one. The other cook books are great.

I don’t think this book is “simple” at all. The ingredients are hard to find and not what you’d have on-hand. Every recipe is like “okay, I don’t have that” and it doesn’t have recommendations for substitutions. I even bought the few “must have” special spices, and even so, I cannot get through this book without continually having to buy some uncommon ingredient. I was hoping this book would help me get started with cooking, but it is the opposite of that. I’m discouraged and disappointed I spent any money on this.
